Here’s how to make the best weeknight meal you’ll ever have! 

Super thin crispy chicken cutlets are piled high with refreshing caesar salad and served on a buttery brioche bun. It is SUCH a delicious meal.

Caesar salad tops the list of my favorite foods. My crispy chicken cutlets are up there too! The cutlets are something that my kids have fallen in love with. The paper-thin chicken breasts that are fried until crunchy crispy are just divine. 

And I most often serve them ON salad, so it’s fine to serve salad on top of them!

Chicken caesar salad is a gateway salad for my kids. It’s one they all really like. And I get it! Something about it is so classic, nostalgic and familiar tasting. 

My greek yogurt dressing has been a staple in this house for well over a decade. I have it in my fridge often. Even if it’s at the end of a batch, I will use it as a marinade to grill chicken or make it more of a vinaigrette with some olive oil. There are so many uses for it, especially if you love caesar everything like we do.

Next: the chicken cutlets!

These are probably what all my kids would request if you ask them their favorite meal. Or their favorite thing that I make. They call it my “crispy chicken” and can’t get enough. 

The chicken cutlets cook so quickly because they are very thin. But in the case that you want to prepare them ahead of time, you can assemble these sandwiches in just 10 or 15 minutes. Heat the chicken in the oven or air fryer, toss some romaine with caesar dressing and shaved parmesan and throw both on the brioche bun.

I’ve stuck the cutlets in the freezer before with lots of success! I have many other recipes where I use this chicken, like my caesar wraps. Salads, sandwiches, pasta – you name it. This works. 

So there is no real “recipe” here aside from the components! Once you have the dressing made and the chicken made, assemble the sandwich however you’d like. Use as much salad, use multiple cutlets, whatever you prefer. You can also make it your own by adding some wing sauce or hot sauce to the chicken or using kale instead of romaine!

Crispy Chicken Caesar Sandwiches

Crispy Chicken Caesar Sandwiches

The best meal ever! These crispy chicken caesar sandwiches are such a crowd pleaser. Super thin and crisp chicken cutlets are topped with caesar salad and served on brioche. Delish!

  • Thinly slice the chicken breasts lengthwise to make thin chicken cutlets. You want THIN slices – ones you can almost see through! I get 3 to 5 thin slices from one chicken breast. Season the chicken all over with salt and pepper. Line a baking sheet with paper towels.

  • Place the eggs in a shallow plate or bowl. Stir together the breadcrumbs and parmesan in another plate or bowl.

  • Heat 1 to 2 tablespoons of olive oil in a large skillet over medium heat. I like to heat the oil for a good 5 minutes before adding the chicken. Watch the heat the entire time – if it seems to be too hot, make sure to lower it!

  • Dip each piece of chicken into the egg, then into the breadcrumbs, pressing gently so the crumbs adhere.

  • Add the chicken 2 to 3 pieces at a time. Cook on each side until deeply golden, about 3 to 4 minutes per side. This should cook the chicken the entire way through, but take the temperature to make sure it is 165 degrees F inside if you’re unsure. Remove each piece of chicken and place it on the paper towel-lined sheet. Repeat with remaining chicken.

  • To make the dressing, add the garlic, yogurt, parmesan, mustard, vinegar, anchovy paste, lemon juice, salt and pepper to a food processor or blender and blend until pureed. With the processor still on, stream in the olive oil until a creamy dressing forms. (This may make more dressing than needed, but you can store it sealed in the fridge for about 3 to 4 days and stir well before using.) You can make this ahead of time!

  • Place the romaine in a large bowl and toss with a big pinch of salt and pepper. Drizzle with a few tablespoons of the caesar dressing. Add in the finely grated and shaved parmesan. Toss the lettuce well so everything is coated.

  • Assemble the sandwiches by placing a cutlet (or 2) on a bun and topping it high with caesar salad. You can serve the sandwich with extra salad too!
